Junmai KAGURA – Yamadaho

This Junmai sake is brewed with Yamadaho, the parent rice variety of the renowned sake rice Yamada Nishiki, polished to 80%. Yamadaho originated around 1877 and has a fascinating history. Although it was once widely cultivated, its production gradually disappeared as Yamada Nishiki rose to prominence. After more than 60 years, however, Yamadaho was successfully revived, making it a rice variety with a remarkable story behind it. Because Yamadaho is naturally low in lipids, our goal was to create a sake with a robust structure and depth of flavor while maintaining exceptional purity and minimal unwanted notes. To fully express the character and richness of the rice, we intentionally chose a relatively low polishing ratio of 80%. The aroma opens with the fresh, vibrant character that is distinctive to KAGURA, then develops into subtle spicy notes that stimulate the senses. The result is a Junmai sake with a bold personality, offering a different expression from our usual KAGURA lineup. It is particularly appealing to experienced sake enthusiasts and professionals seeking a deeper exploration of sake. This sake is completely unfiltered, allowing the natural character of the rice to remain intact. Depending on the bottling timing, rice-derived components may remain in the bottle. In the unpasteurized (namazake) version, the lively energy of the active yeast can be experienced directly on the palate.
