The "Q" represents Quality, while the "F" signifies Fresh or Draft, highlighting a style engineered to deliver the vibrant experience of drinking fresh sake directly from the brewery tank. To preserve its delicate unpasteurized quality, the sake is stored immediately after pressing in specialized KEG DRAFT barrels under chilled, vacuum-controlled conditions to prevent oxidation and secondary fermentation without heat pasteurization. It is then bottled direct-from-draft in small monthly batches, ensuring a fresh, slightly effervescent profile. The brewery adopts a minimalist approach for the front label, intentionally leaving off technical specifications like the rice polishing ratio or Sake Meter Value so drinkers can appreciate the sake purely through taste and aroma rather than technical expectations. On the nose, it offers expressive aromas of fresh green fruit like apple and melon along with delicate floral notes. On the palate, it delivers a clean, lively feel with a gentle fruit sweetness balanced by a subtle savory umami depth and a crisp, silky finish.
