Mitsutake Shuzojo, also known as Mitsutake Sake Brewery, is a historic Japanese sake and shochu distillery situated in Kashima City within Saga Prefecture. Founded in 1688 during the Genroku era, the brewery operates under the philosophy that "brewing sake is a human development," balancing traditional craftsmanship with creative innovation under current president Hiroyuki Mitsutake. The brewery relies on local resources for its production, drawing subterranean water from the nearby Tara Mountains and sourcing high-quality Saga Prefecture rice such as Saga Biyori and Yumeshizuku. Alongside its traditional sake offerings, Mitsutake Shuzojo produces barley and sweet potato shochu, gaining widespread attention for its pop-culture collaboration series, including officially licensed Fist of the North Star shochu. Visitors can explore the brewery's public-facing location, Hizennya, in Kashima's historic Hama-machi district, which offers product tastings and retail sales.
